TRACK 05: MICROBIOLOGY OF FOODS

The food microbiology is the study of the microorganisms that give both benefits and implications on food. The pathogen may be divided into broad spectrum of bacteria, viruses, molds, yeasts etc. These cause changes in the appearance, texture, color and odor. The microbial damage is caused by both intrinsic factors and extrinsic factors. Intrinsic factors include moisture content, PH , nutrient content of the food etc. The extrinsic factors include temperature, relative humidity, concentration of gases in the environment etc. On the other hand, there are various beneficial microorganism which on the process of fermentation results in various products.

Food additives are the substances that are generally added to preserve the flavor or enhance the taste, appearance, color or other qualities. The additives can be of natural or synthetic type. The additives are divided into a broad spectrum of acidity regulators, anticaking agents, foaming agents, colorants, antioxidants, bulking agents, humectants, flavor enhancers, emulsifying agents, flour enhancers, thickeners, sweeteners, stabilizers etc. The Adequate Daily Intake (ADI) of additives is standardized and the numbering is done to follow the proper guidelines. The food allergen information is also included in labelling standards.

TRACK 09: ENZYMES IN FOOD

Enzymes are the catalysts which perform specific reactions essential for the production process and improve the quality of the final product. Very small quantity of enzymes can speed up the reaction to many folds. The enzymes act on narrow range of conditions such as concentration, acidity and temperature. The enzymes are extracted from plant source, animal source and even the microorganisms. Amylases, Proteases, Lipase, papain, rennet, pectinase are the commonly used enzymes in food industries.

The food packaging is done to prevent its physical, chemical and biological damage. The proper package should contain nutritional labeling, helps in marketing of the products, provides protection to the product which it contains and should be convenient. The packaging type may be of primary, secondary and tertiary. Trays, cans, cartons, bags, boxes, pallets, wrappers etc are used to pack the foods. The various techniques followed for packaging of food are Aseptic, Vacuum, Modified atmosphere, Active, Biodegradable.

Food waste is the major thread to the society. Though enough food is being produced, the food is being wasted every day on one part of the world and a poor man starves for a day meal on the other part of the world. The global food loss and wastage accounts between one third and one half of all food being produced. The food waste or loss occurs in all stages from processing till consumption.
